Fermentation:
Juice was drained off each variety after filling the tanks and settled overnight before being racked off their lees. Each component fermented separately at 14 ºC for 2 weeks. Once all wines finished fermentation they were blended together. After 4 months of maturation on fine lees the wine was filtered and bottled.
