Fermentation:
Cabernet Sauvignon direct inoculation with yeast and warm
fermentation at 30ºC for 8 days and macerated for a further 8 days
before being pressed. The Shiraz had 2 days of cold soak before
inoculation with yeast and fermented for 5 days at 32ºC and
macerated for a further 10 days before being pressed. Merlot had 4
days of cold soak before inoculation and fermented for a further 10
days before pressing.
Maturation:
After malolactic fermentation in tanks, all 3 components were blended
and transferred to barrels for 15 months of maturation, 25% new
French Oak
