Tasting note:
A wine to ward off evil spirits or an icy winter. Consisting mainly of press wine – the last drops pressed from the skins after fermentation – this blend is concentrated in the extreme. While the spiciness of French Oak lends an air of sophistication, this is not a wine that will be revered for its subtlety. The Quentin Tarantino remake of Sideways.

CELLAR INFORMATION
Harvest date:
Pinotage: 3 to 11 February, Cabernet Sauvignon: March 19 to 24, Shiraz: February 16 to 25
Harvest Sugar:
Between 24.5 and 28ºB
Yield:
Between 4.5 to 8 Ton/Ha
Fermentation:
The Pinotage had 4 days of cold soak at 10ºC before inoculation. It then fermented for a further 5 days on its skins at 30ºC before being pressed.
The Shiraz had 2 days of cold soak at 10ºC before inoculation and then fermented dry on skins for 8 days, at 30ºC. After fermentation it macerated for a further 5 days before being pressed.
The Cabernet Sauvignon was directly inoculated with yeast and fermented for 5 days at 32ºC. It macerated for a further 15 days before being pressed.
Maturation:
After malolactic fermentation in tanks, the wine was blended and transferred to barrels for 12 months. (20% new French oak was used). After fining and a light filtration the wine was bottled
