Tasting note:
Consisting mainly of press wine – the last drops pressed from the skins after fermentation – this blend is concentrated in the extreme. Its texture is thick and dense. Flavours cover the whole spectrum, with the Crucible Shiraz giving the wine an rich savouriness on the mid-palate. The spiciness of French Oak (25% new) lends an an air of sophistication to this off-beat wine. Big, bold and juicy – a wine to ward off evil spirits or just to enjoy.

Fermentation:
All grape varieties were fermented (at temperatures between 28 and 30 degrees) and pressed separately. Press wines of all the cultivars was blended randomly, malolactic fermentation was completed after blending.
Maturation:
Malolactic fermentation completed in Stainless Steel tanks after which the wine was transferred to French Oak Barrels for 15 months of maturation.
